    Zucchini with Dill and Garlic Yogurt Sauce

    Zucchini with dill and garlic yogurt sauce is a dish mainly eaten in the spring and summer because it’s light and refreshing, but also filling in the same time. Technically it’s a kind of salad or a side dish, but you can also make more of it and eat it as a meal. Just grab yourself a piece of nice bread and you’ll get a light lunch or dinner.

    This particular dish (or salad depending on how you eat it) is especially popular in Bulgaria and most people eat it mainly in the summertime when zucchini are in peak season. In fact, its so popular that you can actually find it sold in supermarkets pre-packaged into containers and ready to eat. The only difference is that the packaged version has Bechamel like sauce while this one uses fresh plain yogurt and its far more refreshing than the packaged one. Also in the packaged versions, the zucchini are usually cut into long strips with the sauce on top.

    One important thing is to use thick plain yogurt to get a nice and thick sauce. If you have just ordinary plain yogurt that’s quite runny here’s what you can do: Take a sieve, place it onto a small bowl, line it with cheesecloth and slowly pour couple of tablespoons of yogurt into it. Leave the sieve into the fridge and after 1-2 hours you’ll get a nice and thick strained yogurt.

    To add more richness to the sauce without altering the taste too much you can also add a tablespoon of mayonnaise. The mayonnaise will give the sauce a little more richness and creaminess, but if you don’t like mayonnaise you can definitely leave it out.

    There are also two ways to cut the zucchini, in circles or in long strips. How you cut your zucchini is your own preference and it won’t change the taste of the dish at all. To make the dish more interesting for kids, you can also cut the zucchini in fun shapes with a knife or different cookie cutters.

    Prep the zucchini

    Wash and peal the zucchini. Cut them into 1/2 cm (1/4 inch) rounds or strips. Mix the flour with salt and pepper and dredge each zucchini piece in the flour. Add more flour in needed.

    Fry the zucchini

    Heat 2-3 tablespoons of vegetable oil into a pan and fry the zucchini pieces until golden brown. Place the zucchini pieces on a paper towel to soak the excess oil.

    Mix the sauce

    Finely mince the garlic and dill. In a small bowl mix the plain yogurt, minced garlic and dill, add some salt and a tablespoon of mayonnaise (optional). Mix everything together.

    Serve the dish

    Arrange the zucchini pieces onto a plate and add some of the sauce on top. Garnish with some dill.
