    Spinach and Rice with Ground Pork

    Spinach and rice with ground pork is a dish that’s made in almost every Balkan country, and almost each and every country has a different way of making it. The difference is that in some countries fresh herbs like dill, parsley or even lemon are used to change the flavor of the dish. And in some countries, finely minced garlic is added to the yogurt to make a simple yogurt sauce which is then poured on top of the dish.

    Spinach and rice with ground pork is usually made for lunch because in all Balkan countries lunch is the most important meal of the day. Lunch is usually more elaborate and filling, unlike dinner where people prefer to eat something a little more lighter like soup, salad or sandwich so that they won’t feel too full before going to bed.

    For this particular dish we’ve used 100% ground pork, but a mixture of 60% pork and 40% beef is also quite popular, so you can use that too. Also, for this recipe we’ve used long grain rice and 2 cups of water, but if you use another type of rice like short grain rice or even brown rice, read the packaging and see how much water that particular type of rice requires. You don’t have to, but it’s a good idea to wash the rice so that you’ll remove the excess starch from the rice and the grains will separate when cooked.

    This dish contains meat, but there’s another version of this dish called only spinach and rice in which the meat is omitted. The dish is often made when people are fasting before Easter or Christmas or on other religious holidays since the dish doesn’t contain meat. Spinach and rice is also great for vegetarians and vegans because it doesn’t contain any animal products.

    Blanch the spinach

    Remove the stems of the fresh spinach and wash the spinach well. Blanch the spinach into a boiling water for 5 minutes or until wilted. Roughly chop the wilted spinach and set it aside.

    Wash the rice

    Wash the 5-7 times or until the water gets clear. Soak the rice in water until needed.

    Saute and mix the ingredients

    Mince the onion and add it to the pan with the oil. Fry the onion until translucent and add the ground pork. Saute the mixture until all the water from the meat is evaporated. Drain the rice and add it to the pan to the onion and ground meat. Saute everything for extra 2-3 minutes and turn off the heat. Add salt and pepper and the chopped spinach to the pan and mix everything until combined. Transfer the mixture into a baking pan and add the water.

    Bake the dish

    Bake the spinach and rice with ground pork in a preheated oven at 200 degrees Celsius (400 degrees Fahrenheit) for 40-60 minutes. If you don't want the rice on the top to get golden and crispy, gently stir the spinach and rice for few times while it bakes. Serve the dish with a dollop of yogurt on the top.
