Simple Quince Jam Cake
Let’s start this website with something sweet that’s simple and extremely easy to make. This is a simple quince jam cake that’s light a fluffy and it goes great with tea or coffee. It has a really soft and nice texture with a light vanilla flavor and of course, a little surprise from the quince jam. Once it’s cooled, if you wrap it in cling wrap and store it properly, it stays soft for at least couple of days.
For this particular recipe we’ve used quince jam, just because we had it laying around in the fridge, but you can feel free to use your favorite jam or fresh fruit instead. You can also use frozen fruit, but be sure to thaw the fruit first and strain the excess liquid before adding it to the cake so it won’t make the batter too liquid. So make this simple quince jam cake and enjoy it with a steamy cup of your favorite beverage this chilly winter weather.
Before starting to make your simple quince jam cake, here are two helpful tips:
- When beating your eggs and sugar, one way to test if the sugar is completely melted is to turn off the mixer, dip your finger into the mixture (in the center of your bowl) and rub some of the mixture between your fingers. If you can still feel the sugar granules, you need to beat it for few more minutes. If the mixture feels smooth and silky, its ready for the next step.
- Every oven is different, so if yours bakes the outside of your cake too fast and your cake gets too brown on the top but it still isn’t baked in the center, cover it lightly with aluminum foil and bake it until it’s completely done.
