    No-Bake Chocolate Peanut Bars

    These no-bake chocolate peanut bars are incredibly scrumptious an they’re perfect for all of you who love peanuts and chocolate mixed together. They’re great when you have uninvited guests coming because they don’t require any baking so you can whip them up in minutes and serve them to your guests. Although they taste great the day they’re made, they taste even better the next day when all the flavors have mingled together.

    For this recipe we’ve also used Pettit-Beurre biscuits like we did in the chocolate, coconut & walnut truffles. We find that these biscuits (or crackers or cookies whatever you want to call them) have an incredibly tender and crumbly texture while still holding their shape nicely and they have an amazing vanilla and butter flavor. Also they tend to be slightly sweeter than the digestive biscuits or graham crackers, so they’ll give a little bit extra sweetness to any dessert.

    Of course, these types of recipes are very versatile, so feel free to use your favorite cookies or biscuits or just use whatever cookies you have laying around in your house and experiment with different textures and flavors. Also, for these no-bake chocolate peanut bars we’ve used dark chocolate, but you can experiment with different chocolates like milk or white chocolate.

    One step that we find really important is to toast your peanuts for a minute before you grind them even if you bought your peanuts already toasted. The extra toasting will bring out the flavor of the peanuts and their flavor will become even more deep and nutty, a flavor which goes great with the chocolate. Also if you love mixing sweet and salty flavors you can use slightly salted peanuts, but be careful not to add too much salt into your dessert because it won’t be a dessert anymore.

    Toast the peanuts

    In a small heavy bottom pot add the peanuts and toast them for 1-2 minutes on a medium-low heat while constantly stirring, until they slightly change color and you start to feel their aroma. Remove them form the pot and set them aside.

    Process the ingredients

    In a food processor, grind the peanuts until fine. Remove them from the food processor and add the biscuits into the processor. Process them until fine, remove them from the processor and set them aside.

    Melt the ingredients

    In the same pot, add the butter, milk, chocolate, sugar and vanilla extract and heat them on a medium high heat until everything is meted and the mixture starts to boil.

    Mix all of the ingredients

    Once the mixture starts to boil, turn off the heat, add the ground peanuts and biscuits and mix well. Dump the warm mixture into a baking pan lined with parchment paper or cling film and press and smooth the mixture until you get something like a very thick pie crust. Place the mixture in the fridge to chill.

    Make the glaze

    After the mixture has chilled, melt the chocolate and oil in a double boiler and pour it onto your chocolate peanut bars. At this point you can add some extra peanuts on top for decoration. Leave the chocolate to set and cut your no-bake chocolate peanut bars into whatever shape you want.
