    Brzi Gonzales Cake – Speedy Gonzales Cake

    As you probably saw from the title, this simple cake is called Brzi Gonzales Cake (cyrillic: Брзи Гонзалес колач) or literally translated as Speedy Gonzales Cake. And you might be wondering what this simple cake has to do with the cartoon character Speedy Gonzales. The answer is: nothing.

    We have no idea where this cake originated and how it got its name, but it’s really delicious. It probably got its name by this character because it’s really fast to make. Or maybe it’s because it’ll disappear from the plate in minutes because it’s so good.

    Brzi Gonzales Cake is a soft fluffy cake poured with chocolate syrup and rolled in coconut. It’s actually very similar to the Australian lamingtons, only the cake is lighter and fluffier. Also the chocolate sauce is more of a syrup than sauce. And it doesn’t have the jam or cream filling that lamingtons sometimes have. Also because the chocolate syrup is poured on top of the cake, some of the cake doesn’t soak up the syrup and that’s why it usually gets a marbled effect. But if your cake doesn’t get the marbled effect, don’t worry it’ll still be delicious.

    The original recipe for the syrup calls for water and cocoa powder. If you want an even more decadent cake, feel free to use milk and couple of pieces of dark or milk chocolate. One thing that you can’t omit though is the shredded coconut because it’s an integral part of the cake’s taste and texture.

    Preheat your oven

    Before starting to make Brzi Gonzales Cake (Speedy Gonzales Cake), preheat your oven to 180 degrees Celsius (350 degrees Fahrenheit).

    Beat the eggs and sugar

    With a stand mixer or by hand, beat the eggs, sugar and vanilla extract until you get pale and fluffy mixture and the sugar is completely melted.

    Add the rest of the ingredients

    Add the milk and vegetable oil and mix slightly, then add all of the dry ingredients and mix until the flour is well incorporated. Don't over mix the batter.

    Bake and cut the cake

    Bake your cake for 40-60 minutes or toothpick inserted in center of the cake comes out clean. Leave the cake for 10-20 minutes to cool a little then cut it into squares.

    Make the syrup

    Mix all of the ingredients (for the syrup) in a small pot and bring them to boil.

    Pour the syrup and roll it in coconut

    Pour the warm syrup onto the cold cake and leave it to cool slightly. When the cake squares are cool enough to handle, roll each piece into shredded coconut and serve.
